Thankful for my new favorite meal, which looks pretty on a plate and covers all my nutritional bases for healthy fats, protein, whole grains and little green. Take one slice Ezekiel bread and stick it in the toaster. While it toasts, get out an avocado and slice a 1/4 section from it, then take a piece of cheese (swiss, provolone, cheddar, etc.) and melt it on top of the toasted bread. Finish with thick avocado slices, a sprinkle of course sea salt and a grind of pepper. Yes, just yes.
Thankful for the pots waiting in my driveway to be filled with soil and seeds and water and sunshine. I’m taking up a new hobby as a part of my simple summer: gardening. In an endeavor to put my hands in some soil and grow my own food, I am planting cucumbers, zucchini and carrots. Wish me luck as I attempt to color my thumbs green.
